    Prepare glass

    If rimming, wipe the serving glass rim with a damp orange peel and dip lightly into coarse sugar. Fill the glass with one large ice cube to chill while you build the drink.

    Combine ingredients

    In a cocktail shaker (or mixing tin) add the reposado tequila, fresh lemon juice, honey syrup, and dried orange bitters. Add the aged tawny port last — putting it in the shaker will help marry the flavors.

    Shake

    Add a handful of ice to the shaker and shake vigorously for 10–12 seconds until well chilled (the outside of the shaker should frost).

    Strain and serve

    Dump the ice from the chilled serving glass. Double-strain the cocktail into the glass over 1–2 large ice cubes using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp.

    Finish & garnish

    Express an orange peel over the drink by pinching the peel skin-side down to release oils, run the peel around the rim, then drop it into the glass. Optionally float a dehydrated orange wheel on top.

    To make honey syrup: warm equal parts honey and water and stir until combined; cool before using. Aged tawny port lends nuttiness and caramel notes; adjust quantity up to 1/4 oz (0.5 tbs) more if you prefer a sweeter, richer finish.
