Method

Preparation

    Make honey syrup

    Combine equal parts honey and warm water (for these quantities, 1/4 cup honey + 1/4 cup water). Stir until fully combined and cool. Store chilled; use 1/2 oz for this cocktail.

    Chill glass

    Place a coupe or chilled rocks glass in the freezer or fill with ice water while you prepare the drink.

Muddling & Mixing

    In a mixing glass or shaker, gently lightly clap the mint leaves between your hands to release aroma (do not bruise). Add the mint to the shaker and gently muddle once or twice — just to bruise the surface and release oils, not to pulverize.

    Add dry gin (2 oz), Green Chartreuse (1/2 oz), St. Germain (1/2 oz), fresh lemon juice (3/4 oz), honey syrup (1/2 oz), and 2 dashes orange bitters into the shaker with the mint.

    Fill the shaker with fine ice and shake vigorously for 12–15 seconds until the outside of the shaker feels very cold and slightly frosted. The fine ice helps achieve proper dilution and texture.

Straining & Serving

    Discard the ice or water from your chilled serving glass. Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the chilled coupe or rocks glass over a large clear ice cube or neat if using coupe.

    Express the oils of a lemon twist over the drink by holding the twist over the surface and giving it a quick squeeze, then rim the glass with the twist and drop it in as garnish alongside a fresh mint sprig.

    Optional: slap the mint sprig once and place it atop the drink for an aromatic finish.
