Method

Calamari Preparation

    Marinate the Calamari

    In a bowl, combine the cleaned calamari rings with olive oil, Kashmiri chili powder, salt, and black pepper. Toss until the calamari is evenly coated and allow it to marinate for at least 30 minutes.

    Preheat the Wood-Fired Oven

    Prepare your wood-fired oven by heating it to a high temperature (around 450-500°F or 232-260°C).

Melted Leek Preparation

    Sauté the Leeks

    In a skillet over medium heat, melt the butter. Add the sliced leeks and a pinch of salt. Cook slowly, stirring occasionally, until the leeks are soft and translucent, about 10-15 minutes. Set aside.

Preserved Lemon Aioli Preparation

    Make the Aioli

    In a mixing bowl, combine the mayonnaise, finely chopped preserved lemon, minced garlic, and lemon juice. Mix well and season with salt to taste. Refrigerate until ready to serve.

Cooking the Calamari

    Cook the Calamari

    Once the oven is hot, place the marinated calamari on a grill grate or a cast-iron skillet and cook for 2-3 minutes on each side, or until they are just cooked through and have a nice char.

Assembly

    On a serving plate, spread a generous layer of melted leeks. Top with the grilled calamari and drizzle with the preserved lemon aioli. Serve immediately.
