Dough

Method

Dough Preparation

  1. 1

    Activate the Yeast

In a bowl, combine warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix with a fork until a shaggy dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Form into a ball.

  4. 4

    Let the Dough Rise

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Pizza Assembly

  1. 5

    Preheat the Oven

Preheat your oven to 475°F (245°C) and place a pizza stone or a baking sheet inside to heat up.

  2. 6

    Cook the Guanciale

In a skillet over medium heat, cook the diced guanciale until crispy, about 5-7 minutes. Remove from heat and set aside.

  3. 7

    Prepare the Spinach

In the same skillet, add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

  4. 8

    Shape the Dough

Once the dough has risen, punch it down and transfer it to a floured surface. Roll or stretch it into a 12-inch round.

  5. 9

    Assemble the Pizza

Transfer the dough to a pizza peel or baking sheet. Evenly distribute the sautéed spinach and crispy guanciale over the dough. Top with slices of buffalo mozzarella and sprinkle grated Parmesan cheese over the top. Add salted pepperberries and freshly ground black pepper to taste.

  6. 10

    Bake the Pizza

Carefully slide the pizza onto the preheated stone or sheet. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly.

  7. 11

    Serve

Remove the pizza from the oven, let it cool for a minute, slice, and serve immediately.
