Preheat the Oven
Preheat your oven to its highest setting, typically around 250°C (482°F) or higher if possible. This will ensure a crispy pizza crust.

Sauté the Spinach
In the same skillet, add a tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

Prepare the Pizza Base
On a floured surface, stretch or roll out the pizza dough to your desired thickness. Transfer the dough onto a pizza stone or baking tray lined with parchment paper.

Assemble the Pizza
Spread a thin layer of olive oil over the pizza dough. Evenly distribute the sautéed spinach over the base, followed by pieces of crispy guanciale. Tear the buffalo mozzarella into chunks and scatter them over the pizza. Finally, sprinkle grated parmesan cheese on top and add salted pepperberries to taste.

Place the pizza in the preheated oven and bake for 10-12 minutes or until the crust is golden and the cheese is bubbling.
