Crostata Dough

Prepare the Dough
In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Roll Out the Dough
On a floured surface, roll out the chilled dough into a large circle about 1/8 inch thick. Transfer to a tart pan or baking sheet.
Apple Compote

Cook the Apples
In a medium saucepan, combine diced apples, brown sugar, cinnamon, and lemon juice over medium heat. Cook until apples are soft and mixture is syrupy, about 15 minutes. Set aside to cool.
Pepita Praline Cream

Make the Praline
In a saucepan over medium heat, combine pepitas and sugar. Stir constantly until the sugar melts and coats the pepitas, about 5 minutes. Spread onto parchment paper to cool.

Prepare the Cream
In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in crushed praline and vanilla extract until well combined.
Fried Pepitas

Fry the Pepitas
Heat oil in a small saucepan over medium-high heat. Add raw pepitas and fry until they puff up and turn golden, about 2-3 minutes. Remove and drain on paper towels. Sprinkle with salt.
Apple Cider Sorbet

Make the Sorbet
In a mixing bowl, combine apple cider, sugar, and lemon juice. Stir until sugar dissolves. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for at least 4 hours.
