Chocolate Fudge Brownie Gelato

    Prepare the Base

    In a medium saucepan, combine cocoa powder, granulated sugar, and salt. Stir in whole milk and heavy cream. Heat over medium heat until the mixture is warm, stirring occasionally.

    Add Eggs

    In a separate bowl, whisk together the eggs. Gradually add a small amount of the warm chocolate mixture into the eggs while whisking to temper them. Once combined, pour the egg mixture back into the saucepan.

    Cook the Mixture

    Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.

    Cool and Churn

    Remove from heat and stir in vanilla extract. Allow to cool to room temperature, then refrigerate until cold. Once chilled, churn in an ice cream maker according to manufacturer's instructions. Fold in crumbled brownies before transferring to a container.

Meyer Lemon Meringue Gelato

    Make the Custard Base

    In a saucepan, whisk together Meyer lemon juice, granulated sugar, and cornstarch. Gradually add whole milk and cook over medium heat, stirring constantly until thickened, about 10 minutes.

    Prepare Egg Yolks

    In a bowl, whisk the egg yolks. Slowly temper the egg yolks with the hot lemon mixture by adding a bit of the mixture to the yolks while whisking. Once combined, return to the saucepan.

    Cook and Cool

    Cook for an additional 5 minutes, stirring constantly. Remove from heat and stir in heavy cream, vanilla extract, and salt. Let it cool down, then refrigerate until cold.

    Prepare Meringue

    Whip egg whites in a clean bowl until soft peaks form. Gradually add remaining sugar and whip until stiff peaks form. Fold meringue into the lemon mixture.

    Churn and Freeze

    Churn the mixture in an ice cream maker according to manufacturer's instructions. Transfer to a container and freeze until set.

Concord Grape Mint Sorbet

    Prepare Grape Mixture

    In a blender, combine Concord grapes and water. Blend until smooth and strain through a fine mesh sieve to remove skins and seeds.

    Make Sorbet Base

    In a saucepan, combine strained grape juice, sugar, and a pinch of salt. Heat over medium heat until sugar is dissolved. Stir in lemon juice and chopped mint.

    Chill and Freeze

    Allow the mixture to cool to room temperature, then refrigerate until cold. Churn in an ice cream maker according to manufacturer's instructions until a soft-serve consistency is reached. Transfer to a container and freeze until firm.
