Preheat your oven to 300°F (150°C). While the oven is heating, prepare the ingredients.

Marinate the Pork
In a large bowl, combine the olive oil, minced garlic, chopped green chilies, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. Mix well to create a marinade.

Coat the Pork Shoulder
Place the pork shoulder in the bowl with the marinade. Use your hands to rub the marinade all over the meat, ensuring it is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or preferably overnight.

After marinating, place the pork shoulder on a roasting rack in a roasting pan. Pour any remaining marinade over the top of the pork. Insert a meat thermometer into the thickest part of the pork.
