    Prepare the Marinade

    In a medium-sized bowl, combine the extra virgin olive oil, sliced garlic, chopped rosemary, chopped thyme, red pepper flakes, lemon zest, and black peppercorns. Stir well to mix all ingredients together.

    Add the Olives

    Add the mixed olives to the marinade, ensuring that all olives are well coated with the oil and spices. Stir gently to combine.

    Season to Taste

    Taste the mixture and add sea salt according to your preference. Remember that the olives may already have some saltiness.

    Cover the bowl with plastic wrap or transfer the olive mixture to a jar with a lid. Allow the olives to marinate for at least 2 hours at room temperature, or refrigerate overnight for best flavor.
