Falafel

    Prepare the Falafel Mixture

    In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, onion, ground cumin, ground coriander, baking powder, flour, salt, and pepper. Blend until the mixture is combined but still slightly chunky.

    Shape the Falafel

    Transfer the mixture to a bowl and refrigerate for about 30 minutes. Once chilled, form the mixture into small balls or patties.

    Fry the Falafel

    Heat olive oil in a deep pan over medium heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

Amba Yogurt

    Combine Ingredients

    In a small bowl, mix together the plain yogurt, amba sauce, and a pinch of salt until well blended.

Pickled Turnips

    Prepare the Brine

    In a saucepan, combine the water, white vinegar, salt, and sugar. Bring to a boil, then remove from heat.

    Pickle the Turnips

    Place the cut turnips in a jar and pour the brine over them. Allow to cool, then seal the jar and refrigerate for at least 24 hours before serving.

Soft Boiled Egg

    Boil the Eggs

    Bring a pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for a soft yolk. Remove and place in an ice bath for a few minutes. Peel and set aside.
