Preparation

Prepare the Endive

Wash and dry the endive leaves. Remove any damaged outer leaves and cut the endive into bite-sized pieces.

Prepare the Apple

Core the apple and slice it thinly. You can leave the skin on for added texture.

Prepare the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Adjust seasoning to taste.

Prepare the Roasted Garlic

If not already done, roast the garlic cloves by wrapping them in aluminum foil with a drizzle of olive oil and baking at 400°F (200°C) for about 30-35 minutes until soft. Allow to cool.

Crush the Pistachios

Using a mortar and pestle or a rolling pin, crush the pistachios into small pieces.

Combine Ingredients

In a large bowl, combine the endive, apple slices, roasted garlic, Gordal olives, and crushed pistachios.

Add Dressing

Drizzle the prepared dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.

Sprinkle the shredded Parmesan cheese over the top of the salad before serving.
