Method

Cured Ocean Trout

    Prepare the Cure

    In a bowl, combine the sea salt, brown sugar, fresh dill, and lemon zest. Mix well.

    Cure the Trout

    Place the ocean trout fillet in a shallow dish. Rub the cure mixture evenly over the trout, ensuring it is well coated. Cover with plastic wrap and refrigerate for 24-36 hours.

    Rinse and Slice

    After curing, rinse the trout under cold water to remove the cure. Pat dry with paper towels and slice thinly.

Roasted Sesame Tahina

    Toast the Sesame Seeds

    In a dry skillet over medium heat, toast the sesame seeds until golden brown, stirring frequently, about 5 minutes.

    Make the Tahina

    In a blender, combine the toasted sesame seeds, olive oil, lemon juice, garlic, and water. Blend until smooth. Adjust the consistency with more water if needed. Season with salt to taste.

Pickled Chestnut Mushrooms

    Prepare the Pickling Liquid

    In a saucepan, combine white vinegar, water, sugar, salt, and black peppercorns. Bring to a simmer over medium heat, stirring until the sugar and salt are dissolved.

    Pickle the Mushrooms

    Remove the saucepan from heat and add the chestnut mushrooms. Allow them to cool in the liquid for at least 30 minutes before transferring to a jar. Refrigerate for at least 2 hours before use.

Toasted Pine Nuts

    In a dry skillet over medium heat, add the pine nuts and toast until golden and fragrant, about 3-5 minutes. Stir frequently to prevent burning.
