Chocolate Brownies

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

Melt Butter
In a saucepan, melt the unsalted butter over medium heat. Remove from heat and stir in granulated sugar and brown sugar until well combined.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually fold this mixture into the wet ingredients.

Add Chocolate Chips
Fold in the semi-sweet chocolate chips until evenly distributed.

Bake Brownies
Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.

Allow the brownies to cool in the dish on a wire rack before cutting them into squares.

Prepare Ice Cream Base
In a medium saucepan, combine heavy cream, whole milk, and white chocolate chips. Heat over medium heat until the chocolate is melted and the mixture is smooth.

Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

Add Olive Oil and Vanilla
Remove from heat and stir in the extra virgin olive oil and vanilla extract. Let it cool, then chill in the refrigerator for at least 4 hours or overnight.

Churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the ice cream to a container and freeze until solid.
Cardamom Poached Quince

Peel, core, and cut the quinces into quarters.

In a large pot, combine water, granulated sugar, cardamom pods, and lemon juice. Bring to a boil, then reduce heat to simmer.

Add the quince pieces to the pot and simmer for about 30-40 minutes, or until tender.

Remove the pot from heat and let the quince cool in the poaching liquid.
Caramelized Puff Pastry

Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheets on a lightly floured surface. Cut into desired shapes.
