    If using a block of mozzarella, cut into 24 equal 3-inch sticks. Pat each stick dry with paper towels to remove surface moisture—this helps the coating adhere.

    Place the flour in a shallow bowl. In a second bowl, whisk the eggs with the milk until smooth. In a third bowl, combine the breadcrumbs, crushed tortilla chips (if using), grated Parmesan, smoked paprika, cayenne, garlic powder, onion powder, kosher salt, and black pepper.

    Optional cornstarch dust

    Lightly dust each cheese stick with cornstarch (tap off excess). This step helps the flour stick and creates a drier surface for breading.

    First coating

    Working in batches of 6 to avoid melting, dredge each stick in flour, shaking off excess, then dip into the egg mixture, letting excess egg drip off.

    Breadcrumb coating

    Press each egg-coated stick firmly into the breadcrumb mixture, ensuring an even, compact coating. For extra insurance against leaking cheese, return each coated stick to the egg wash and then again into the breadcrumbs for a double coat. Place finished sticks on a parchment-lined sheet pan and freeze for at least 30 minutes (preferably 60 minutes) to firm up the cheese.

For Frying (or Air-Frying)

    Heat the oil or preheat air fryer

    If deep-frying: pour oil into a heavy-bottomed pot to a depth of about 2–3 inches and heat to 350°F (175°C). If air-frying: preheat your air fryer to 400°F (200°C) and lightly coat the basket with cooking spray.

    Fry the sticks

    Deep-fry in small batches (4–6 sticks) for 1.5–2 minutes, turning once, until golden brown. Do not overcook—cheese should be melted but coating golden. Remove with a slotted spoon and drain on a wire rack or paper towel-lined sheet.

    If using an air fryer: place frozen coated sticks in a single layer (do not overcrowd), spray lightly with cooking spray, and cook for 7–9 minutes at 400°F (200°C), flipping halfway, until golden and crisp. Times vary by model—watch closely near the end.

Spicy Coating & Finish

    Make the spicy butter glaze

    Combine the melted butter, hot sauce, sriracha, and chopped parsley in a heatproof bowl. Stir until homogenous.

    Toss fried sticks in glaze

    While the mozzarella sticks are hot, place them briefly in a large bowl and spoon the spicy butter glaze over them, turning gently to coat evenly. Alternatively, brush glaze on each stick. Transfer to a serving platter.

    In a small saucepan over medium-low heat, warm the olive oil and sauté the minced garlic for 30 seconds until fragrant (do not brown).
