Snowdrift Coquito Base
Flavor & Spice
Optional Texture & Finish
Method
Snowdrift Coquito Base
- 1
Combine milks and rum
In a blender, add evaporated milk, sweetened condensed milk, coconut milk, whole milk and 1 cup white rum. Pulse 6–8 times to combine until smooth and homogeneous. Do not overblend — you want a creamy mixture, not frothy.
- 2
Adjust creaminess (optional)
If you prefer a richer texture, add 1/2 cup coconut cream and pulse 2–3 times to incorporate. If mixture seems too thick, add up to 1/4 cup iced water and pulse once to loosen.
Flavor & Spice
- 3
Sweeten and spice
Add 2 tablespoons granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg and a pinch of sea salt to the blender. Add the two cinnamon sticks (broken in half so flavor releases). Pulse 4–6 times, then blend on low for 10–12 seconds to fully integrate the spices and sugar.
- 4
Taste and balance
Taste the coquito and adjust sweetness, spice or rum level as desired. For a boozier drink, add up to 1/4 cup more rum. For more sweetness, add up to 1 tablespoon additional sugar. If adding anything, pulse briefly to combine.
- 5
Infuse and chill
Pour the blended mixture into a sealable pitcher or bottle, remove the broken cinnamon sticks if desired (you can leave them in for longer infusion), seal, and refrigerate at least 4 hours, preferably overnight. Chilling allows flavors to meld and the texture to firm slightly.
Optional Texture & Finish
- 6
Toast shredded coconut (optional)
If using, toast 2 tablespoons shredded coconut in a dry skillet over medium heat for 2–4 minutes, stirring constantly, until golden and fragrant. Remove immediately and cool.
- 7
Serve
When ready to serve, give the chilled coquito a gentle stir or brief pulse in the blender (5 seconds) to reincorporate any settled cream. Pour into chilled small glasses or shot glasses over a few ice cubes if desired. Garnish each serving with a light dusting of grated fresh nutmeg, a sprinkle of toasted shredded coconut, and a cinnamon stick.
- 8
Storage
Store refrigerated in a sealed bottle for up to 7–10 days. Shake gently before serving — separation is natural. Do not freeze (dairy will separate).
