Build and Stir
Chill an Old Fashioned glass by filling it with ice or placing it briefly in the freezer. In a mixing glass add 1.25 oz reposado tequila, 0.5 oz mezcal, 0.25 oz agave syrup, 3 dashes grapefruit bitters and 1 dash Angostura bitters (if using). Fill the mixing glass with cubed ice.

Stir
Stir the mixture briskly for 20–30 seconds (about 20–30 full rotations) until the outside of the mixing glass feels nicely cold and slightly frosted. This dilutes and integrates the agave evenly.

Prepare Glass
Discard the ice from the chilled Old Fashioned glass. Place one large clear ice cube (or several large cubes) in the glass.

Strain
Strain the stirred cocktail over the large ice cube into the prepared Old Fashioned glass.

Express & Garnish
Take a grapefruit twist and hold it over the drink. Give it a firm squeeze to release the oil, then rub the peel around the glass rim and drop it into the drink. Optionally express an orange peel over the surface and discard or add as a second garnish for extra citrus aroma.

Serve
Serve immediately. Recommend sipping slowly to enjoy the balance of smoky mezcal, smooth reposado, bright grapefruit bitters and gentle agave sweetness.
