Mezcal Negroni

Chill glass
Place a rocks glass in the freezer or fill it with ice and water to chill while you prepare the cocktail (about 2–3 minutes).

Combine ingredients
In a mixing glass, add 1 oz 400 Conejos mezcal, 1 oz Campari, 1 oz sweet vermouth, and 2 dashes of orange bitters.

Prepare the serving glass
If you chilled the rocks glass with ice water, discard the ice/water. Add one or two large fresh ice cubes to the glass.

Strain and garnish
Strain the stirred cocktail into the prepared rocks glass over the large ice. Express the oils from an orange peel by holding it skin-side down over the drink and giving it a firm twist, then run the peel around the glass rim and drop it into the drink as garnish.

Serve
Serve immediately. Optionally provide a small straw or stirrer for the guest to adjust dilution as desired.
Equipment notes

Use a mixing glass and stir (do not shake) to preserve clarity and texture. Large ice cubes are preferred to control dilution.
