Chicken & Brine

    Brine the chicken

    In a large bowl or container, combine whole milk, yogurt (if using), 2 tablespoons kosher salt, 1 tablespoon sugar, smashed garlic cloves, peppercorns, and bay leaf. Add the chicken pieces, submerge, cover, and refrigerate for 4 to 6 hours (or up to overnight). This tenderizes and flavors the meat.

    When ready to fry, remove chicken from refrigerator and let sit at room temperature for 30 minutes while you prepare dredge and oil. Reserve the brine/milk mixture.

Dredge & Seasoning

    Prepare dry mix

    In a large shallow bowl or rimmed baking sheet, whisk together all-purpose flour, cornstarch, smoked paprika, sweet paprika, onion powder, garlic powder, cayenne, black pepper, and 2 teaspoons kosher salt until evenly combined.

    Prepare wet mix

    In a separate bowl, whisk the eggs with 2 tablespoons of hot sauce and 1/2 cup (120 ml) of the reserved brine/milk. This forms a slightly spicy batter for better adhesion. If batter is too thin, add a tablespoon of flour to thicken slightly.

    Double-dredge the chicken

    Working one piece at a time: Shake off excess brine from chicken. Dredge the piece in the seasoned flour, pressing to adhere. Dip into the egg/batter mixture, then immediately return to the flour mix for a second coating, pressing firmly so a thick crust forms. Set coated pieces on a wire rack and let rest for 10–15 minutes to set the crust.

    Heat the oil

    Pour neutral oil into a heavy-bottomed Dutch oven or deep fryer to a depth of about 3–3.5 inches (use enough to fully submerge pieces). Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to maintain consistent temperature.

    Fry in batches

    Carefully lower chicken pieces into the oil, skin-side down if applicable, without overcrowding. Fry in batches, adjusting heat to keep oil between 325–350°F (160–175°C). Fry bone-in pieces about 12–16 minutes per batch depending on size, turning once halfway, until crust is deep golden and internal temperature reaches 165°F (74°C). Remove to a wire rack set over a sheet pan to drain — do not stack pieces.

    Between batches, bring oil back up to 350°F before adding the next batch. Total frying time varies by batch count; expect 20–30 minutes active frying time plus rest.

Hot Buttered Vinegar Sauce

    Make the sauce

    While the last batch fries, combine butter, apple cider vinegar, 1/4 cup hot sauce, honey, Worcestershire sauce, salt and pepper in a small saucepan over low heat. Whisk gently until butter is melted and sauce is emulsified. Taste and adjust — add more hot sauce for heat, more honey for sweetness, or a splash more vinegar for tang. Keep warm on the lowest heat.

    If you prefer room-temperature sauce, melt and let cool slightly before tossing with chicken.

Quick Pickled Slaw & Garnish

    Make quick pickled slaw

    In a bowl, whisk together distilled white vinegar, water, sugar, and 1/2 teaspoon kosher salt until dissolved. Toss shredded green and red cabbage and julienned carrot with the pickling liquid. Add chopped parsley and pickled jalapeños if using. Let sit at least 15 minutes (can be made up to 2 hours ahead). Taste and adjust salt or sugar as desired.

    Drain excess liquid just before serving so the slaw doesn't make the crust soggy.

Assembly & Serve

    Finish the chicken

    Place fried chicken on the wire rack. Using a pastry brush or by tossing quickly in a large bowl, coat each hot piece generously with the warm hot-buttered vinegar sauce. For a crispier finish, brush lightly so excess sauce drains off and crust remains crunchy.

    Top each piece with a small pile of quick pickled slaw. Garnish with chopped parsley and serve with lemon wedges and extra hot sauce on the side.
