    Prepare glass

    Chill a large wine glass or Collins glass by filling with ice and setting aside while assembling the cocktail. If preferred, pre-chill glass in refrigerator.

    Build base

    Discard the ice from the chilled serving glass. In a mixing glass or shaker filled with fresh ice, combine 1.5 oz New Amsterdam Gin, 0.75 oz Aperol, 0.5 oz St-Germain (elderflower liqueur), 0.5 oz fresh lemon juice, and 0.5 oz ginger syrup.

    Stir and chill

    Stir the mixture gently for 15–20 seconds (or shake briefly if you prefer a slightly more aerated texture) until the outside of the mixing vessel becomes cold. This properly chills and dilutes the base.

    Strain over fresh ice

    Fill the chilled serving glass halfway with fresh ice (about 3/4 cup). Strain the mixed base into the glass over the ice.

    Top with bubbles

    Carefully top the cocktail with 2 oz chilled sparkling wine or Prosecco. If you want a slightly longer, lighter spritz, add up to 1 oz club soda on top. Do not stir vigorously; a gentle swirl or a single gentle stir is enough to integrate.

    Garnish and finish

    Express a lemon twist over the drink to release oils, then drop the twist into the glass. Optionally thread a small piece of candied or thinly sliced fresh ginger onto a pick and rest it on the rim or float it in the cocktail for aroma and presentation.

    Serve

    Serve immediately while the sparkling wine is effervescent. Suggestion: pair with light bar snacks or citrus-forward dishes.
