Honey-ginger syrup

    Combine honey, water, and sliced ginger in a small saucepan. Bring to a gentle simmer over medium-low heat, stirring until the honey is fully dissolved. Simmer gently for 5 minutes to infuse ginger flavor.

    Remove from heat and let the syrup cool to room temperature with the ginger steeping for another 15–20 minutes for stronger flavor.

    Strain out the ginger and transfer the syrup to a sealed container. Refrigerate—syrup will keep for up to 2 weeks. Measure out 0.5 oz for the cocktail.

Cocktail assembly

    Prepare glass

    Chill a double old-fashioned glass or coupe by filling with ice water while you build the drink. When ready, discard the ice water and fill the glass with a scoop of crushed ice (about 1 cup) if serving on the rocks; alternatively, leave the glass chilled for a shaken, strained presentation.

    Add the gin (2 oz), fresh lime juice (0.75 oz), lime cordial (0.5 oz), passionfruit purée (1 oz), coconut cream (0.5 oz), honey-ginger syrup (0.5 oz), and egg white (0.5 oz, if using) into a cocktail shaker.

    Dry shake vigorously (without ice) for 15–20 seconds to emulsify the egg white and coconut cream, creating a creamy texture and good foam.

    Add 1 cup of ice to the shaker and shake again hard for 10–15 seconds until well chilled and slightly diluted.

    Double-strain the cocktail into the prepared glass over crushed ice (or into the chilled, ice-free glass if serving up) using both the shaker strainer and a fine-mesh strainer to remove small ice shards and any solids from passionfruit or coconut.

    Garnish with a dehydrated lime wheel perched on the edge, a light dusting of toasted coconut flakes across the foam, and an optional edible flower or mint sprig for color. Serve immediately.
