In a cocktail shaker add Woody Creek gin (2 oz), Aperol (1 oz), apricot liqueur (1/2 oz), fresh grapefruit juice (3/4 oz), lavender syrup (1/2 oz) and fresh lemon juice (1/4 oz). If using egg white for a silkier texture, add 1/2 egg white now.

Dry shake
If using egg white: seal the shaker and dry-shake (no ice) vigorously for 12–15 seconds to emulsify and build foam.

Wet shake
Add plenty of ice to the shaker (large cubes preferred). Shake vigorously for 12–18 seconds until the shaker is very cold to the touch (this chills and dilutes the cocktail properly).

Strain
Discard the ice/water from the chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a fine mesh strainer over a Hawthorne/standard strainer to remove small ice shards and any egg white solids for a silky, clean presentation.
Garnish & Serve

Express the grapefruit twist: hold the twist over the drink, skin side down, and give it a firm twist to release oils across the surface of the cocktail; then run the twist around the rim and drop it onto the drink or perch it on the rim.

Garnish with a small sprig of lavender, placing it either floated on the foam (if egg white used) or leaning on the rim. The lavender adds aroma; do not muddle it into the drink.

Serve immediately. Recommend serving one cocktail per guest.
