Prepare and measure
Measure 2 oz blanco tequila, 1 oz Cointreau and 1 oz fresh lime juice. Set aside in a jigger or small container so they're ready to combine.

Make ginger syrup (if you don't have ready-made)
Combine 1/4 cup peeled, thinly sliced fresh ginger and 1/4 cup sugar with 1/4 cup water in a small saucepan. Bring to a gentle simmer for 5 minutes, stirring until sugar dissolves. Remove from heat, let steep 15 minutes, then strain and cool. Yields about 3/4 cup. Use 0.5 oz of this syrup in the cocktail.

Prepare peach purée
Place 1/2 cup chopped ripe peach in a small blender or muddling glass. Add 0.25 oz simple syrup only if your peach is not very sweet. If using fresh ginger juice instead of syrup, add 0.5 oz fresh ginger juice now. Purée until smooth (about 10–15 seconds). If you prefer a silkier texture, strain through a fine mesh sieve and discard solids; otherwise keep the purée for body.

Rim the glass (optional)
Run a lime wedge around the rim of a rocks or coupe glass. Dip the rim into a shallow plate of coarse salt or Tajín to coat evenly. Set the glass aside.

Shake the cocktail
In a cocktail shaker, add the peach purée (about 1/2 cup or the strained equivalent), measured tequila, Cointreau, lime juice, 0.5 oz ginger syrup (or 0.5 oz fresh ginger juice) and 0.25 oz simple syrup if using. Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the shaker is cold and slightly frosted.

Double strain and serve
Double strain the mixture through a fine mesh strainer into the prepared glass over fresh ice (if serving on the rocks) or into the chilled coupe without ice. This removes peach fibers and ice shards for a smooth sip.

Garnish
Finish with a thin peach slice or a piece of candied ginger on the rim or floated on top. Serve with a short stirrer and a lime wedge on the side.
