Activate and mix
In a large mixing bowl combine warm water (about 105–115°F / 40–46°C), warm milk, sugar and instant yeast. Stir and let sit 5 minutes until foamy. If no foam appears, yeast may be inactive; start again with fresh yeast.

Combine dry and wet
To the yeast mixture add 2 cups of the flour, salt, and melted butter. Stir with a wooden spoon or dough hook until a shaggy dough forms. Add remaining 1 cup flour gradually; mix until a soft, slightly tacky dough forms. You may need up to 2–3 tablespoons more flour if dough is overly sticky, but keep it slightly tacky for tender knots.

Knead
Turn dough onto a lightly floured surface and knead by hand for 6–8 minutes until smooth and elastic (or knead with a stand mixer fitted with a dough hook for 5 minutes on medium). Dough should spring back when pressed.

Shape knots
Punch dough down and turn it out onto a lightly floured surface. Divide into 12 equal pieces (about 2 oz / 55 g each). Roll each piece into a 10–12 inch rope. Tie each rope into a knot by making a loose overhand knot and tucking the ends under the knot to create a neat roll. Place knots on a parchment-lined baking sheet leaving 1–1.5 inches between knots.

Second rise
Cover knots with lightly greased plastic or a damp towel and let rise 25–30 minutes until puffy.

Preheat
Preheat oven to 375°F (190°C) during the last 10 minutes of the second rise.

Prepare garlic butter
While knots are baking, melt 6 tbsp unsalted butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently for 1–2 minutes until fragrant but not browned (browned garlic will taste bitter). Remove from heat and stir in chopped parsley, 1/2 tsp salt, 1/4 tsp black pepper and grated Parmesan if using. Keep warm.

Make glaze
In a small bowl combine honey, red pepper flakes, chili-garlic sauce (or sambal), apple cider vinegar, 1 tbsp hot water and 1/8 tsp salt. Stir until smooth and slightly thinned. Taste and adjust heat (add more red pepper flakes or chili-garlic sauce for more kick).
