Brew tea
Brew 4 cups strong black tea (use 4–6 tea bags or 4 tbsp loose leaf) with just-boiled water and steep 5–7 minutes. Strain and set aside to cool slightly.

In a large heavy saucepan or stockpot, combine the brewed black tea, apple cider, orange juice, dark rum, brandy and spiced rum (if using). Warm gently over low heat — do not boil once alcohol is added — just to meld flavors while you prepare the fig-spice infusion (about 5–8 minutes).

In a smaller saucepan, add the quartered dried figs, brown sugar, molasses, cloves, cinnamon sticks, star anise and sliced ginger. Add 1 cup water and bring to a simmer over medium heat. Reduce heat and simmer gently for 12–15 minutes, stirring occasionally, until figs soften and the liquid becomes syrupy.

Remove from heat and lightly mash the figs with a wooden spoon or potato masher to release more fruit and flavor. Let the fig-spice mixture steep 10 minutes more to concentrate aroma, then strain through a fine mesh sieve into the large punch pot with the warmed alcohol-tea-cider mixture, pressing solids to extract syrup. Discard or reserve solids for garnish (optional).

Stir in fresh lemon juice and add the orange slice to the punch for additional aroma. Taste and adjust acidity: add more lemon if the punch feels too sweet or heavy.

Allow the combined punch to cool to room temperature (or refrigerate until chilled). When ready to serve, gently stir in the ginger beer to add effervescence. If you prefer no alcohol or lower ABV, increase ginger beer and reduce spirits accordingly.

Transfer punch to your serving bowl over an ice block or add ice cubes to individual glasses. Float candied figs or dried fig halves, rosemary sprigs and lemon slices on top. Finish with a light grating of fresh nutmeg over the bowl or each glass.
