Falafel Crispy Pita Bites Recipe

    Soak chickpeas

    If you haven’t already, cover the dried chickpeas with cold water by 2–3 inches and soak 8–24 hours in the refrigerator. Drain and rinse well before using.

    Drain soaked chickpeas and transfer to a food processor. Add rough-chopped onion, parsley, cilantro, dill (if using), garlic, ground cumin, ground coriander, salt and pepper.

    Pulse the mixture in 10–15 short bursts, scraping the bowl as needed. You want a coarse, grainy paste that holds together when pressed — not a smooth purée.

    Transfer mixture to a bowl. Stir in baking powder and flour. If mixture seems too wet to form balls, add an extra tablespoon of flour. Chill 20–30 minutes to firm up (optional but helps hold shape).

    Form small falafel balls about 1 to 1 1/4 inches (roughly 12–16 bites). Gently compress each ball into a slightly flattened disc to make pita-bite friendly shapes.

    Heat vegetable oil in a deep skillet or pot to 350°F (175°C). If you don’t have a thermometer, test with one falafel — it should sizzle instantly and brown in 2–3 minutes.

    Fry falafel in batches, 2–4 minutes per side or until deep golden brown and crisp. Don’t overcrowd the pan. Transfer to a paper towel–lined tray and lightly salt immediately.

Hummus

    If using store-bought hummus, transfer to a small bowl and stir in 1–2 teaspoons olive oil. If making quick homemade hummus, blend 1 cup canned chickpeas (drained), 2 tbs tahini, 1 tbs lemon juice, 1 garlic clove, 2–3 tbs olive oil and salt to taste until smooth, adding 1–2 tbs water if needed.

Zhoug (Green Chili Herb Sauce)

    Combine cilantro, parsley, garlic, green chili, lemon juice, olive oil, cumin and salt in a mini food processor or blender.

    Pulse until a coarse, bright-green sauce forms. Taste and adjust salt, lemon, or chili heat as desired. If too thick, thin with 1–2 teaspoons water or olive oil.

Sumac Pickled Onions

    Place thinly sliced red onion in a heatproof bowl or jar. In a small saucepan, warm apple cider vinegar, water, sugar and salt just until sugar dissolves; do not boil.

    Pour the warm brine over the onions, stir in the sumac, and let cool to room temperature. Cover and refrigerate at least 30 minutes (preferably 1 hour) — can be made up to 3 days ahead.

Assembly & Serve

    Warm mini pita rounds briefly in a 350°F (175°C) oven for 3–4 minutes or in a dry skillet until pliable and slightly toasted.

    Spread about 1 tablespoon hummus on each warm pita round.

    Place 1 falafel (or 1 falafel half if large) on top of the hummus. For larger falafels, quarter them so each pita bite has a clean fit.

    Drizzle roughly 1/2 teaspoon zhoug over each falafel bite (adjust to heat preference).

    Top with a few slices of sumac pickled onion and a small cilantro leaf. Sprinkle a tiny pinch of extra sumac over each bite for brightness.

    Serve immediately with lemon wedges on the side for squeezing over the bites.
