    Prepare peach purée (if not using ready purée)

    Pit and roughly chop one ripe white peach. Place peach pieces in a blender and purée until smooth. Optional: press through a fine mesh strainer to remove solids for a silkier texture. Measure 1 oz for the cocktail. Chill briefly if warm.

    Build and stir

    In a mixing glass, combine 2 oz Woody Creek bourbon, 1 oz white peach purée, and 0.25 oz simple syrup. Add 3 dashes peach bitters and 2 dashes black walnut bitters. Fill the mixing glass with ice and stir gently for 20–30 seconds (about 20–30 revolutions) until well-chilled and slightly diluted.

    Strain

    Place a large ice cube into a chilled old-fashioned glass. Double-strain the stirred cocktail into the glass over the large ice cube using a Hawthorne and fine-mesh strainer to remove tiny peach particulate (if you pressed the purée this may be less necessary).

Garnish & Finish

    Express orange peel

    Express an orange peel over the drink by holding it skin-side down over the glass and giving it a firm squeeze to release oils. Rub the rim of the glass with the peel and drop it into the drink or lay it on the ice.

    Add peach slice

    Garnish with one thin slice of white peach laid on top of the ice or skewered on a pick and rested on the rim. Serve immediately.
