    Prep vegetables and potatoes

    Halve, peel if desired, and dice the potatoes into roughly 1/2-inch pieces so they cook evenly. Finely dice the yellow onion and red bell pepper. Pat ingredients ready near the stove.

    Cook potatoes

    Heat a nonstick or cast-iron skillet over medium heat and add 1 tsp cooking oil. Add the diced potatoes in a single layer and let them cook undisturbed for 4–5 minutes until golden on one side, then stir and continue to cook 6–8 minutes more until tender and evenly browned. Season with 1/4 tsp salt and 1/8 tsp black pepper while cooking.

    Sauté aromatics and peppers

    Push potatoes to one side of the skillet (or remove briefly if skillet is crowded). Add 1 tbsp butter to the pan and when it melts, add the diced onion and red bell pepper. Sauté 3–4 minutes until softened and translucent. If you removed the potatoes, return them now and combine. Stir in the chopped smoked sausage or bacon and cook 1–2 minutes until heated through and slightly crisp. Adjust seasoning with 1/4 tsp salt and a pinch of pepper.

    Scramble eggs

    While vegetables cook, whisk 4 large eggs with 2 tbsp whole milk until homogenous. In a separate small nonstick skillet or the cleared space in your main skillet over low–medium heat, add a small pat of butter (about 1/2 tbsp). Pour in the egg mixture and let sit 10–15 seconds, then gently stir and fold until soft curds form and eggs are just set but still moist, about 2–3 minutes total. Season with remaining 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat.

    Finish filling

    Combine the scrambled eggs with the potato/pepper/sausage mixture in the main skillet or a mixing bowl. Stir in chopped cilantro and squeeze half a lime over the filling. Taste and adjust salt/pepper or lime as desired.

    Warm the salsa if you prefer it hot by microwaving for 20–30 seconds or heating in a small saucepan over low heat. Mix sour cream with the optional hot sauce (if using) for a quick spicy crema.

    Grate or measure out 3/4 cup shredded cheddar and have sour cream and salsa ready for assembly.

    Warm and prepare tortillas

    Warm each flour tortilla for 10–15 seconds per side in a dry skillet over medium heat or wrap in a damp paper towel and microwave 20–30 seconds until pliable. Lightly brush one side with olive oil or melted butter if you plan to toast the assembled burrito.

    Assemble burritos

    Lay a warm tortilla flat. Spoon half of the filling (about 1 to 1 1/4 cups) down the center of the tortilla lengthwise. Top with half of the shredded cheddar (about 3/8 cup), 2 tbsp salsa, and 1 tbsp sour cream (or to taste). Fold the bottom edge up over the filling, fold the two sides in, then roll tightly away from you to close. Repeat with second tortilla and remaining filling.

    Toast (optional) and serve

    Heat a clean skillet over medium heat and place the burrito seam-side down to seal, pressing gently with a spatula. Toast 1.5–2 minutes per side until golden and crisp. If you brushed with oil/butter, it will brown more evenly. Remove, slice in half on a slight diagonal, and serve with extra salsa, sour cream, and a lime wedge.
