Prep

    Chill and prepare fruit

    Chill the punch bowl and serving glasses in the refrigerator for at least 30 minutes. While chilling, wash and slice the oranges into wheels, halve the strawberries, cut pineapple into chunks, and slice limes into wheels or wedges. Reserve a few whole mint sprigs for garnish.

    If using a large ice block, prepare a mold or tub and freeze at least 24 hours in advance. For quicker cooling, fill a large bowl with ice cubes.

Make Simple Syrup (if not using pre-made)

    Simple syrup

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and cool to room temperature. Transfer to a jar and refrigerate until ready to use.

Mix the Punch

    Combine spirits

    In a large punch bowl (about 3–4 gallon capacity), pour in the white rum (2 cups), dark rum (1 cup), vodka (1 cup), triple sec (1 cup), and amber/orange rum if using (1/2 cup). Stir gently to combine.

    Add juices and syrups

    Add pineapple juice (4 cups), orange juice (3 cups), cranberry juice (2 cups), fresh lime juice (1/2 cup), and fresh lemon juice (1/4 cup) to the bowl. Stir in the simple syrup (1 cup) and grenadine (1/2 cup) until evenly distributed. Taste and adjust sweetness with more simple syrup or grenadine as needed.

    Add fruit and chill

    Add pineapple chunks, orange wheels, lime wheels and halved strawberries to the punch. Gently stir to release some fruit juices and distribute fruit evenly. Cover and refrigerate the punch for at least 1 hour (up to 4 hours) to meld flavors — do not add carbonated mixers until ready to serve to preserve fizz.

Finish & Serve

    Add carbonation

    Just before serving, add club soda or sparkling water (4 cups) and optional ginger ale (2 cups) to the punch bowl. Stir gently to combine; avoid vigorous stirring to keep carbonation.

    Adjust and garnish

    Taste the punch and add up to 6 tsp Angostura bitters if desired for aromatic depth. If you like a darker rum note atop each glass, reserve 1/2 cup dark rum to float at service: pour a small amount over the back of a spoon into each served glass.

    Place the large ice block in the center of the bowl or add ice cubes around the fruit. Float additional orange wheels, lime wedges and mint sprigs on top for a decorative finish.

    Serve with a ladle into chilled glasses, including fruit in each serving. Garnish individual glasses with a mint sprig and an orange or lime wheel. Expect approximately 16 servings (5–6 oz alcohol-forward servings) depending on glass size.
