Preparation
If rimming is desired, rub a lime wedge around the outer edge of a chilled coupe or rocks glass and dip the rim lightly into sea or smoked salt to coat. Set the glass aside to chill.
Fill a cocktail shaker with ice (about 1 cup).
Mixing & Shake
Combine ingredients
Pour 2 oz blanco tequila, 0.75 oz Aperol, 0.75 oz fresh lime juice, 1 oz pineapple juice, 0.5 oz agave syrup and 2 dashes orange bitters into the shaker over the ice.
Shake
Cap the shaker and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the outside of the shaker is frosty. This chills and dilutes the cocktail properly.
Fine-strain the mixture into the prepared chilled glass (if you used a coupe) or into a rocks glass over fresh large ice if you prefer it on the rocks.
Garnish & Serve
Garnish with a pineapple leaf or small pineapple wheel and a lime wheel on the rim. If you used a salted rim, the lime can be tucked against the rim so each sip hits a bit of salt.
Serve immediately. The bright citrus, pineapple sweetness and bitter-sweet Aperol create a balanced, refreshing Pacifico cocktail.
