Taco Filling
Heat a medium skillet over medium-high heat and add 1 tsp vegetable oil.
Add the chopped onion and cook, stirring, until softened and translucent, about 2–3 minutes.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the ground beef (or turkey) to the skillet. Break it up with a spatula and cook until browned and mostly no longer pink, about 4–5 minutes.
Drain excess fat if needed, leaving a thin coating in the pan for flavor.
Sprinkle in chili powder, ground cumin, paprika, salt, and black pepper. Stir to coat the meat and toast the spices for 30 seconds.
Stir in 1 tsp tomato paste and 2 tbsp water. Reduce heat to medium-low and simmer for 2–3 minutes until slightly thickened and well combined. Taste and adjust seasoning.
Tortillas & Toasting
Toast each tortilla 30–45 seconds per side until warmed and slightly browned at the edges. Keep warmed tortillas covered with a clean towel to stay pliable.
Assembly & Toppings
Divide the cooked taco filling evenly between the two warm tortillas (about half the filling per tortilla).
Top each taco with shredded lettuce, diced tomato, and shredded cheese.
Add 1 tablespoon sour cream (or crema) split between the two tacos, a sprinkle of chopped cilantro, and a drizzle of hot sauce or salsa to taste.
Serve with a lime wedge to squeeze over each taco just before eating.
