Combine liquids

Pour 1.5 cups dry white wine and 0.5 cup water into a small saucepan and bring to a gentle simmer over medium heat.

Reduce

Allow the liquid to simmer until reduced by about one-third (approximately 8–10 minutes). The volume should concentrate and become slightly syrupy but not sticky.

Aromatics & Flavoring

Sweat aromatics

While the wine reduces, heat a separate medium skillet over low heat. Add the minced shallot and crushed garlic (no extra oil); sweat gently for 2–3 minutes until softened and translucent but not browned.

Add herbs and zest

Add the lemon zest, lemon juice, 2 thyme sprigs and bay leaf to the sweating shallot/garlic and cook 1 minute to release aromas.

Combine with wine

Pour the reduced wine mixture from the saucepan into the skillet with the aromatics. Stir to combine and bring to a bare simmer for 2 minutes so flavors meld.

Enrichment & Texture

Finish with butter

Remove the skillet from the heat. Whisk in the 2 tablespoons of cold cubed unsalted butter, one cube at a time, until fully incorporated and the sauce is glossy and slightly thickened.

Optional cream

If you prefer a richer, silkier finish, whisk in 2 tablespoons heavy cream now and warm gently (do not boil) for 30–60 seconds.

Seasoning & Finish

Season

Taste and season with 1/2 teaspoon sea salt and 1/4 teaspoon freshly ground black pepper, adjusting to preference.

Strain (optional) and garnish

If you want a smooth, clear sauce, strain the mixture through a fine-mesh sieve into a serving bowl, discarding thyme sprigs and bay leaf. Stir in 1 tablespoon finely chopped fresh parsley and serve warm.
