Method

Crust Preparation

  1. 1

    Make the crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch pie dish or springform pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

Filling Preparation

  1. 2

    Prepare the filling

In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

  2. 3

    Combine with fruit

Fold in the fresh fruit until evenly distributed throughout the filling. Pour the mixture onto the cooled crust, smoothing the top with a spatula.

Topping and Serving

  1. 4

    Chill and serve

Refrigerate the dessert for at least 4 hours, or until set. Before serving, top with whipped cream and garnish with mint leaves. Slice and enjoy your delightful dessert after lunch or dinner!
