Prepare mushrooms
Wipe each portabella with a damp paper towel to remove dirt. Remove stems and, using a spoon, gently scrape out the gills if you want thinner, lighter fries (optional). Slice each cap into 8–10 uniform 'fries' (about 1/2" wide). Pat slices dry with paper towels.
Set up dredging station
Place flour in a shallow bowl and season with 1/4 tsp salt and 1/4 tsp black pepper. In a second bowl, whisk together the eggs and milk until homogenous. In a third shallow bowl, combine panko, grated Parmesan, Creole seasoning (2 tsp), garlic powder, and remaining 1/4 tsp salt; mix to distribute evenly.
Bread the mushroom fries
Working in batches, lightly coat mushroom slices in the seasoned flour, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the panko mixture to coat thoroughly. Place breaded fries on a wire rack set over a sheet pan while you heat the oil. For extra adhesion, double-dip: return to egg wash and panko for a thicker crust (optional).

Heat oil
Pour about 1" of neutral oil into a heavy skillet or Dutch oven (approximately 1 cup). Heat over medium-high until it reaches 350°F (175°C) or until a breadcrumb dropped in sizzles and browns in about 30–45 seconds. If you don't have a thermometer, maintain a steady medium-high heat; avoid smoking oil.
Fry the fries
Fry breaded mushroom slices in batches (do not overcrowd) for 2–3 minutes per side, turning once, until golden brown and crisp. Use a slotted spatula or spider to transfer fries to a paper towel-lined tray to drain. Keep cooked fries warm on a sheet pan in a 200°F (95°C) oven while finishing remaining batches.
Ranch Creole Dipping Sauce
Make the sauce
In a small bowl, whisk together prepared ranch dressing, sour cream, mayonnaise, Creole seasoning (1 tsp), hot sauce (if using), chopped chives, lemon juice, 1/4 tsp salt, and 1/4 tsp black pepper until smooth. Taste and adjust seasoning — add a pinch more Creole seasoning or a few drops of hot sauce if you want more kick. Chill or let sit at room temperature while fries are made so flavors meld.
Serve
Arrange hot portabella fries on a platter with the dipping sauce in a small bowl. Garnish fries with any remaining chopped parsley and serve immediately.
