Method
Duck
Prepare
Pat duck breasts dry with paper towel. Score skin in a diamond pattern without cutting into the meat, about 1/4-inch spacing. Season both sides with kosher salt and black pepper, pressing to adhere. Let sit at room temperature for 15 minutes.
Render and Crisp
Place a cold, heavy skillet (preferably cast iron) over medium-low heat. Place duck breasts skin-side down in the cold skillet. Cook gently 8–12 minutes, allowing fat to render and skin to brown deeply and become very crisp. Spoon off excess fat into a heatproof container as it accumulates (reserve for potatoes if desired).
Finish in Oven
When skin is crisp and deeply golden, flip breasts and sear the flesh side 1 minute. Add a whole star anise to the pan alongside the duck. Transfer skillet to a 400°F (200°C) oven and roast 6–8 minutes for medium-rare (internal temp ~135°F / 57°C). Adjust time for preferred doneness. Remove duck to a cutting board and rest 8–10 minutes before slicing.
Orange Sauce & Glaze
Reduce Base
While duck rests, pour 1 cup fresh orange juice, 1 tbs white wine vinegar, 3 tbs sugar, 1 tbs soy sauce, orange zest, and 1/2 cup stock into a small saucepan. Add the star anise that was in the pan (or a fresh one). Bring to a simmer over medium heat and reduce until syrupy and reduced to about 1/3 cup, about 10–12 minutes. Taste and adjust balance: more honey if too tart, more vinegar if too sweet.
Thicken and Finish
Mix 1 tsp cornstarch with 1 tbs cold water to make a slurry. Off the heat, whisk a small amount of the hot reduction into the slurry to temper, then whisk the slurry back into the pan and return to low heat until slightly thickened. Off the heat, whisk in 2 tbs cold butter, 2 tbs honey, 1 tbs soy sauce (if you prefer more savory), and season with 1/4 tsp salt and 1/4 tsp black pepper. Keep warm and strain if you want an ultra-smooth sauce. Remove star anise before serving.
Orange Supremes
Using a sharp knife, cut off the top and bottom of each orange so it sits flat. Working vertically, slice away the peel and pith, following the curve of the fruit. Over a small bowl to catch juice, segment the orange by cutting along each membrane to release the supremes. Reserve any collected juice for the sauce if desired. Set supremes aside, refrigerate briefly until plating.
Ultra Crispy Potatoes
Fry and Crisp
Heat 1 cup oil in a deep skillet or shallow fry pan to 350°F (175°C). In batches if necessary, fry potatoes until golden and very crispy, about 6–8 minutes per batch. Remove to a paper towel-lined tray. Alternatively, roast at 450°F (230°C) with 1 tbs oil and 1 tbs butter turning occasionally until crisp, about 25–30 minutes. When crisp, toss with 1 tbs butter, smashed garlic, fresh thyme, 1 tsp salt and 1/2 tsp pepper. Keep warm.
Honey Carnival Cauliflower
Preheat oven to 425°F (220°C). Toss cauliflower florets with 2 tsp olive oil, 1 tbs honey, 1/2 tsp smoked paprika, 1/2 tsp salt and 1/4 tsp pepper on a rimmed baking sheet. Roast 18–22 minutes, turning halfway, until edges are caramelized and tender. Remove and keep warm. For added char, broil 1–2 minutes at the end watching closely.
Finish & Plating
Slice rested duck breasts thinly across the grain. Warm the orange glaze if necessary and spoon a small puddle on plates.
Arrange 3–4 slices of duck on each plate, fan slices slightly. Spoon orange sauce over the duck and around the plate. Place a small mound of ultra crispy potatoes and 5–6 honey cauliflower florets beside the duck.
Top with 4–6 orange supremes per plate, drizzle a scant 1 tsp honey over the cauliflower for shine, and sprinkle microgreens or chopped parsley. If desired, finish with a few drops of reserved orange juice or a light drizzle of rendered duck fat over the potatoes for extra richness.
Serve immediately.
