Preparation

1

Marinate the Salmon

In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk until well combined. Place salmon fillets in the marinade and let them sit for at least 30 minutes.

2

Prepare the Vegetables

While the salmon is marinating, wash and trim the asparagus. Cut the red bell pepper into strips and halve the cherry tomatoes.

Grilling

3

Preheat the Grill

Preheat your grill to medium-high heat, about 375°F (190°C).

4

Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

5

Grill the Vegetables

Place asparagus, cherry tomatoes, and red bell pepper on the grill. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving

6

Plate the Dish

Once everything is grilled, remove from the grill and let it rest for a couple of minutes. Arrange the salmon and vegetables on a platter. Garnish with fresh parsley and lemon wedges before serving.
