Prepare the Marinade

In a medium bowl, whisk together bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, and black pepper until the sugar is dissolved.

Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat the Oven

Preheat your oven to 400°F (200°C).

Cook the Salmon

In a large oven-safe skillet, heat olive oil over medium-high heat. Remove the salmon from the marinade (reserve the marinade) and sear the fillets, skin-side down, for about 4-5 minutes until browned.

Glaze and Bake

Flip the salmon fillets and pour the reserved marinade over the top. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.

Garnish and Serve

Remove the skillet from the oven, sprinkle with chopped green onions, and serve immediately with your choice of sides.
