Mix dough
Add the flour and salt to the wet mixture. Stir with a wooden spoon or dough hook until a shaggy dough forms. If using a stand mixer, mix on low for 2–3 minutes, then increase to medium for 3–4 minutes until the dough is smooth and elastic. If mixing by hand, turn dough onto a lightly floured surface and knead 8–10 minutes until smooth.

Prepare filling
While the dough rises, combine the grated cheddar, grated mozzarella and softened cream cheese in a bowl. Add the garlic powder, dried parsley, black pepper and salt. Mix thoroughly with a spatula until evenly blended and slightly creamy. If the mixture seems very stiff, let it sit at room temperature a few minutes or microwave for 10–15 seconds to soften the cream cheese further.

Shape rolls
When the dough has doubled, gently deflate it and turn it out onto a lightly floured surface. Roll into a rectangle about 12 x 16 inches (30 x 40 cm) and roughly 1/4-inch thick. Spread the cheese mixture evenly over the dough, leaving a 1/2-inch border on one long edge. Starting from the long edge opposite the border, tightly roll the dough into a log. Pinch the seam and ends to seal.

Cut and place
Using a sharp knife or unfloured dental floss, cut the log into 12 equal rolls (about 1.25–1.5 inches thick). Place the rolls cut-side up in a greased 9x13-inch (or similar) baking pan, leaving a little space between each for expansion. Cover loosely with plastic wrap or a towel and let rise for 30–40 minutes until puffy.

Preheat oven and prepare wash
Preheat the oven to 375°F (190°C). In a small bowl, whisk the egg yolk with 1 teaspoon milk to make an egg wash. Brush the tops of the risen rolls lightly with melted butter, then brush or dab the egg wash onto the very top only (for color). Sprinkle the extra grated cheddar generously over each roll and, if desired, sprinkle sesame or poppy seeds.

Bake
Bake in the preheated oven for 18–22 minutes, until the rolls are golden brown at the edges and the cheese topping is melted and lightly browned. If the tops brown too quickly, tent loosely with foil for the remaining bake time.
