Method
Cooking Polenta
Prepare the Polenta
In a large pot, bring the water to a boil. Add the salt and slowly whisk in the polenta. Reduce heat to low and cook, stirring frequently, for about 30 minutes until thickened.
Finish the Polenta
Stir in the butter and Parmesan cheese until melted and well combined. Remove from heat and keep warm.
Cooking Eggs and Toppings
Cook the Pork Belly
In a skillet, cook the pork belly over medium heat until crispy on both sides. Remove and let drain on paper towels.
Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes until the whites are set and yolks are still runny. Remove with a slotted spoon.
Assemble the Dish
Spoon the warm polenta into a bowl, top with a poached egg, crispy pork belly, and a sprinkle of Aleppo pepper. Garnish with fresh herbs if desired.
