Making the Ice Cream Base
Prepare the Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved.
Add Lemon and Basil
Remove the saucepan from heat and add the lemon zest, lemon juice, and basil leaves. Stir to combine and let the mixture steep for about 15 minutes.
Strain the Mixture
After steeping, strain the mixture through a fine-mesh sieve to remove the basil leaves and lemon zest. Return the liquid to the saucepan.
Incorporate Olive Oil
Whisk in the olive oil and salt until fully incorporated. Allow the mixture to cool to room temperature.
Chill
Cover and refrigerate the mixture for at least 2 hours, or until completely chilled.
Churning the Ice Cream
Churn the Mixture
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
