Method
Hummingbird Cake
Prepare the Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt.
Combine and Bake
Pour the wet ingredients into the dry ingredients and mix until just combined. Divide the batter between the prepared pans and bake for 25-30 minutes.
Cool and Assemble
Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Creole Cheesecake
Prepare the Cheesecake
Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
Mix Ingredients
In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla, lemon juice, and heavy cream.
Bake
Pour the mixture into the prepared pan and bake for 50-60 minutes, or until the center is set.
Cool
Allow to cool in the pan, then refrigerate for at least 4 hours before serving.
Brûléed Banana
Prepare the Bananas
Slice bananas in half lengthwise.
Brûlée
In a skillet, melt butter over medium heat. Add bananas, cut side down. Sprinkle with brown sugar and cook until caramelized, about 2-3 minutes.
Pineapple Ice Cream
Blend Ingredients
In a blender, combine chopped pineapple, heavy cream, sweetened condensed milk, and vanilla. Blend until smooth.
Chill and Freeze
Pour mixture into an ice cream maker and churn according to manufacturer's instructions. Freeze until solid.
