In a large brew kettle, heat 6 liters of water to approximately 70°C (158°F). Add the Pale Malt, Caramel Malt, and Flaked Wheat to the kettle.

Mashing the Grains

Allow the mixture to steep for 60 minutes, maintaining the temperature around 66-68°C (151-154°F). Stir occasionally to ensure even extraction.

Steeping the Grains

After steeping, bring the wort to a boil. Once boiling, add the Citra and Galaxy hop pellets. Boil for an additional 60 minutes.

Boiling

In the last 10 minutes of the boil, add the coriander and orange peel for flavor.

Adding Spices

After the boiling process is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Belgian Saison yeast and seal with an airlock. Allow fermentation at 20-22°C (68-72°F) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the corn sugar in a small amount of boiling water. Add this solution to the beer before bottling to carbonate.

Priming

Bottle the beer in sanitized bottles and cap them. Store in a cool, dark place for 1-2 weeks to carbonate.

After carbonation is complete, chill your beer and enjoy the fresh, spicy flavors of Zenith Formhouse Predator.
