Cook the Mixture
Return the saucepan to the stove over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.
- 7
Cool and Flavor
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until completely chilled, at least 2 hours.
Strawberry Swirl Preparation
- 8
Prepare the Strawberries
In a blender, combine fresh strawberries, granulated sugar, and lemon juice. Blend until smooth.
- 9
Strain Mixture
Strain the strawberry puree through a fine-mesh sieve to remove seeds, if desired. Set aside.
Chocolate Ganache Preparation
- 10
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- 11
Make Ganache
Remove from heat and add the milk chocolate chips. Let sit for 2-3 minutes, then stir until smooth and fully combined.
Gelato Assembly
- 12
Churn the Base
Pour the chilled base mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- 13
Add Strawberry Swirl
During the last few minutes of churning, drizzle in the strawberry puree to create a swirl effect.
- 14
Layer Ganache
Transfer half of the gelato to a container, then drizzle half of the chocolate ganache over it. Repeat with the remaining gelato and ganache.
- 15
Freeze
Cover the container with a lid and freeze for at least 4 hours or until firm.
