Winemaking Process

    Prepare the Grapes

    Wash the Chardonnay grapes thoroughly. Remove the stems and any damaged grapes. Crush the grapes to release their juices into a large fermentation vessel.

    Add Water

    Pour 2 gallons of water into the fermentation vessel with the crushed grapes. Stir well to combine.

    Add Sugar

    Dissolve 3 cups of sugar in a small amount of warm water and add it to the fermentation vessel. Stir until fully dissolved.

    Add Campden Tablets

    Crush 5 Campden tablets and add them to the mixture in the fermentation vessel. This will help to kill wild yeast and bacteria.

    Add Acid Blend

    Stir in 2 tsp of acid blend to balance the acidity of the wine.

    Pitch the Yeast

    Sprinkle the packet of wine yeast over the surface of the mixture. Do not stir. Let it sit for 24 hours to allow the yeast to hydrate.

    Fermentation

    After 24 hours, gently stir the mixture to incorporate the yeast. Seal the fermentation vessel with an airlock and allow it to ferment in a dark, cool place for about 1-2 weeks.

    Racking

    Once fermentation has slowed (bubbles will become less frequent), siphon the wine off the sediment into a clean fermentation vessel, leaving sediment behind.

    Aging

    Let the wine age in a cool, dark place for at least 3 months. Taste periodically to check maturity.

    Bottling

    Once the wine has aged to your liking, siphon it into clean bottles, leaving some space at the top. Cork the bottles and store them in a cool, dark place.
