    Prepare the Meat

    Pat the beef chuck roast dry with paper towels. Season liberally with salt and black pepper on all sides.

    Chop the Vegetables

    Dice the onion, carrots, celery, and mince the garlic cloves.

Cooking

    Sear the Meat

    In a large pot or Dutch oven, heat some oil over medium-high heat. Add the seasoned beef chuck roast and sear it on all sides until browned, about 4-5 minutes per side. Remove the meat and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for 2-3 minutes.

    Add Broth and Herbs

    Return the beef to the pot and add the beef broth. Stir in the thyme, bay leaf, and rosemary.

    Cook the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the meat is fork-tender.
