    Make the Dough

    In a large mixing bowl, combine the flour and salt. Cut the butter into small cubes and add it to the flour mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the cold water to the flour mixture, stirring until the dough comes together. Knead gently for about 1 minute, then shape it into a rectangle.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Roll and Fold

    On a floured surface, roll the dough into a large rectangle. Fold it into thirds like a letter, then roll it out again. Repeat this process 4-5 times to create layers.

    Final Chill

    Once the layers are formed, wrap the dough again and chill in the refrigerator for an additional 30 minutes.

    Bake the Pastry

    Preheat the oven to 400°F (200°C). Roll out the dough to fit a baking sheet. Cut into rectangles and place on a parchment-lined sheet. Bake for 15-20 minutes, until golden brown and puffed. Allow to cool.
