Kale Caesar Salad

Method

Preparation Steps

  1. 1

    Prepare the Kale

Wash the kale leaves thoroughly under cold water to remove any dirt or grit. Remove the tough stems and tear the leaves into bite-sized pieces, then place them in a large mixing bowl.

  2. 2

    Make the Garlic Sourdough Crumbs

Preheat your oven to 350°F (175°C). Cut the sourdough bread into small cubes. In a bowl, toss the sourdough cubes with 1 tablespoon of olive oil and minced garlic. Spread them on a baking sheet and bake for about 10-15 minutes until golden brown and crunchy, stirring halfway through. Remove from oven and let cool.

  3. 3

    Prepare the Caesar Dressing

In a small bowl, whisk together the lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Slowly drizzle in the remaining 1 tablespoon of olive oil while whisking until the dressing is emulsified and creamy.

  4. 4

    Assemble the Salad

Drizzle the prepared dressing over the torn kale leaves and toss gently to combine. Add the parmesan cheese and toss again. Finally, top with the garlic sourdough crumbs.

  5. 5

    Serve

Divide the Kale Caesar salad among serving plates, and enjoy immediately!
