Slice each potato into even strips, about 1/4 inch thick. Try to keep the sizes uniform to ensure even cooking.

Place the cut potato strips in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve a crispier fry.

After soaking, drain the water and thoroughly pat the potato strips dry with a clean kitchen towel or paper towels.
