    Peel the russet potatoes and cut them into small cubes. Rinse under cold water to remove excess starch and pat dry with a paper towel.

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the cubed potatoes, season with salt and pepper, and cook for about 10-15 minutes, stirring occasionally until they are golden and crispy.

    While the potatoes are cooking, chop the onion and bell pepper. Add them to the skillet once the potatoes are crispy, along with minced garlic. Cook for another 5-7 minutes until the vegetables are tender.

    Once the vegetables are cooked, remove from heat and sprinkle with freshly chopped parsley. Adjust seasoning with additional salt and pepper if needed.
