Method

Crispy Fries

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, approximately 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes. This helps to achieve extra crispiness.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry with paper towels. Fry the potatoes in batches for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.

Mornay Sauce

    Make a Roux

    In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until it forms a light roux.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, whisking frequently until the sauce thickens, about 5-7 minutes.

    Add Cheese and Season

    Remove the saucepan from heat and stir in the Gruyere and Parmesan cheeses until melted. Season with nutmeg, salt, and pepper to taste.

Garlic Aioli

    Combine Ingredients

    In a bowl, mix together the mayonnaise, minced garlic, and lemon juice until well combined.

    Add salt to taste and adjust the garlic flavor if desired. Refrigerate until serving.

Fried Farm Egg

    Heat Butter

    In a non-stick skillet, melt the butter over medium heat.

    Fry the Eggs

    Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 2-3 minutes. Season with salt and pepper.
