Preparation of Rabbit Terrine

Prepare the Morels
Soak the dried morel mushrooms in warm water for about 30 minutes until soft. Drain and chop coarsely.

Mix the Ingredients
In a large bowl, combine the diced rabbit meat, pork fat, soaked morels, chopped onion, minced garlic, thyme, salt, pepper, beaten egg, and gelatin. Mix until well combined.

Fill the Terrine Mold
Preheat the oven to 160°C (320°F). Pack the mixture into a terrine mold, pressing down to eliminate air pockets.

Bake the Terrine
Cover the mold with foil and place it in a baking dish filled with hot water. Bake for about 1.5 hours or until the internal temperature reaches 70°C (158°F). Allow to cool before refrigerating.

In a small bowl, whisk together violet mustard, olive oil, white wine vinegar, salt, and pepper until well combined.
